This Moroccan-style couscous with our spiced, plant-based Fjords salami is absolutely delicious. It can be served warm or cold – great for a picnic or BBQ. It’s also ready in just 30 minutes and serves up to four people, making it perfect for a midweek meal for you and your family!

- 30 ml olive oil
- 2 Fjords vegan salami
- 1 halved and thinly sliced red onion
- 1 red pepper cut into chunks
- 2 small halved lengthways and sliced
- 2 tomatoes , roughly chopped
- 650ml vegetable stock
- 2 tbsp harissa paste
- 200g couscous
- parsley and/ or coriander a handful of leaves
- One can of black beans and/ or cannelloni beans ( drain/ rinse sprinkle with olive oil, salt and set aside )
STEP 1: Heat a little oil in a large frying pan and cook the SPIS VEGAN FJORD salami until golden brown all over. Scoop out of the pan, add the onion and pepper, and fry until they are soft and translucent.
STEP 2: Add the courgette and tomato, and cook for a few minutes, then add 300ml vegetable stock and the harissa paste. Slice the salami into chunks on the diagonal, and add them back to the pan. Season, and simmer everything for 10 minutes.
STEP 3: Meanwhile, put the couscous in a bowl and pour over enough chicken stock to come 1cm above the couscous. Cover with clingfilm and leave for 10 minutes.
STEP 4: Serve the couscous in bowls with the fjords vegan salami stew and scatter with the beans & herbs.
